Sumac and Sage "Street Corn"

Idea #6: Sumac and Sage “Street Corn”
Here’s what you do:
Grill 4-6 ears of corn (you can follow these instructions if you’re new to this), turning the ears to evenly char some of the corn kernels on all sides. As the corn cooks, measure 1/4 cup of mayonnaise into a medium bowl, then stir in 1 tablespoon Sumac and Sage Seasoning, 2 teaspoons Aleppo pepper, and 1/2 teaspoon granulated garlic. Shred about 1/4 cup Parmigiano-Reggiano, and mince up a couple tablespoons of fresh parsley.
When the corn is ready, slather each ear generously with the mayonnaise mixture until you’ve used it all up. Top the corn with the parmesan and parsley, and serve.
More options:
If you have leftovers, you can cut the dressed kernels off the remaining cobs and use them as a taco topping.
If it’s not grilling season, you could microwave frozen corn kernels, then toss them with the mayonnaise dressing and other ingredients for a tasty side dish.
