Simplest Steamed Broccoli
The simplest way to cook broccoli, hands down.
This recipe was originally featured in There's More to Broccoli.
Serves 3-4
INGREDIENTS
1 pound broccoli florets
3/4 teaspoons coarse salt
1/2 teaspoon ground garlic
INSTRUCTIONS
Stovetop Steamer Method:
1. Put about an inch of water in the bottom of a steamer (ensuring it's not enough to touch the vegetables that will hang above it). Add the florets to the top of the steamer, put the lid on and warm over high heat until you see steam escaping from the sides of the steamer (about 5-10 minutes).
2. When the broccoli has just begun to turn bright green, sprinkle the salt and garlic over it, briefly tossing to cover everything evenly. (If you add the seasonings before this point, they'll bounce off and fall to the bottom of the pan rather than clinging to the broccoli.)
3. Replace the lid and cook until broccoli is easily pierced with a fork. Remove the broccoli from the steamer and serve quickly. (Don't allow the broccoli to stay in the pot after it's cooked, or it will overcook, soften and lose its bright green color.)
Microwave Method:
1. Put the florets in a large bowl and add 1 Tablespoon of water to the bowl.
2. Cover the bowl with an inverted plate or other non-metallic lid and microwave on high for 2 minutes.
3. Add the salt and garlic powder, toss to combine, and return to the microwave to cook, covered for another 2-3 minutes. Broccoli is done when easily pierced with a fork. When it's finished, remove the lid and serve quickly. (Don't allow the broccoli to sit in the covered bowl after it's cooked, or it will overcook, soften and lose its bright green color.)
Notes:
Cooking time will vary depending on the size of your florets.
Melted butter drizzled over the broccoli will take it from good to great!
