Scallion-Garlic Sour Cream

Super-simple, with scallions, garlic and a pinch of salt blended with sour cream. Serve as a veggie dip or latke topping.

Makes about 1 cup
Ingredients
1 cup sour cream (full-fat preferred)
4 scallions
1 clove garlic
1/2 teaspoon coarse salt
Instructions
1. Put the sour cream in a large bowl. Slice the scallions as thinly as possible and add them.
2. Grate the garlic on a microplane, or pulverize it in a garlic press, and add it to the sour cream mixture. Add the salt and mix with a fork to combine everything.
