Allspice is the berry from the Pimenta dioica plant. To make the spice, the berries are harvested while still green, then dried. Allspice is native to the Caribbean, especially Jamacia, and is used in jerk seasonings there. It’s also used in Middle Eastern, Arab and North African cuisines, and is a common baking ingredient in European and American traditions.
You can steep whole allspice berries in sauces, liquids and teas, or include them in a slow-cooking stew, where they have time to release their flavor to the dish. Alternatively, you can smash or grind them in a spice grinder or mortar and pestle.
