Hey, friend! We are counting down 101 ways you can use our Sumac and Sage Seasoning Blend in your cooking.

Idea #2: Herby Kale Pasta with Sumac & Sage Butter

Here’s what you do:

Pasta tossed with simple Sumac and Sage Seasoning butter sauce, with baby kale leaves, parsley and shaved manchego.

Cook a half-pound of pasta in salted water until slightly underdone. While the pasta cooks, melt 2 tablespoons unsalted butter and 2 tablespoons olive oil together in a large skillet over medium heat. Stir in 1 tablespoon Sumac and Sage Seasoning blend once the oils have melted together. When the foam begins to subside, turn the heat to low and add a handful of baby kale leaves. Saute them until tender.

When the pasta is still just a little underdone, use tongs to transfer it to the skillet. Add about a tablespoon of minced parsley and a few ladles of the pasta water to the skillet. Toss, toss, toss everything together. The starch from the pasta should pull the oil and water together as you toss to form a light, saucy dressing for the pasta as it finishes cooking. Serve with another sprinkle of parsley and some shaved manchego on top.

(PS - to “shave” cheese, use a vegetable peeler to peel off thin shavings of the cheese.)

More options:

  • You could replace the kale leaves with arugula, spinach, chard, or greens of your choice. (You might need to adjust the cooking time if using quicker-cooking greens like spinach).

  • You could make this even herbier with a combination of fresh herbs, or double the amount of parsley.

  • You can replace the manchego with Parmigiano-reggiano or another hard cheese of your choice.
